Norcineria
Monte Vidon Combatte holds a long tradition of “norcineria” (pork butchery), passed down through generations to preserve the authentic flavors of the Fermo hills. Pork processing remains an art, defined by ancient gestures, attention to detail, and genuine ingredients.
Traditional products include cured hams and salamis, “fegatini” (chicken livers), “ciauscolo”, sausages and “cotechini”, all prepared according to traditional recipes that reflect the village’s gastronomic identity.
These specialties are not just food: they are living memories of the community and the key dish of folk festivals, such as the Quail Festival, where taste and tradition meet in an authentic and convivial atmosphere.
